Reskue™ is a selected wine yeast cell-wall for countering stuck or incomplete fermentation in wine musts.
Grape must composition may have inhibiting toxic compounds that affect yeast viability and fermentative activity. This may cause sluggish or stuck alcoholic fermentation.
The use of Reskue™ can help eliminate Short and Medium Chain Fatty Acids and remove pesticide (fongicide, herbicide, insecticide) residues, and enable a complete and steady fermentation. This can also lead to an improvement in the wine fruit character and the production of aromas and esters.
