Tips for wine making and aging: To allow all the sugar to ferment, add the extra sugar in stages as the fermentation starts to slow down. You can also adjust the sweetness of the finished wine by back-sweetening after adding the fermentation stopper. Fortified wines benefit from aging for a few months.
